Champagne Dosnon – Recolte Noire Extra Brut
Caramel and white mushrooms, tastes like old cellars smell. Rather rustic, apple must, abate pear, smarties, slightly reductive. Tannic, powerful and full-bodied, exciting, not very fine, but rich in substance. A raw and conceptual champagne. More of a savory food pairing with a charcuterie platter than an aperitif.
